The Origins of the Wandering Whistler Lavender Fields Cocktail

Long before Wandering Whistler Café opened its doors, Wes enjoyed experimenting with classic cocktails at home. In 2021, while researching floral gin cocktails, he came across a recipe for a Lavender Sage Gin Sour. The combination of botanical gin, bright citrus, lavender, and a silky egg white foam immediately caught his attention.


As he researched the recipe, one recommendation appeared again and again: Empress 1908 Indigo Gin. Known for its botanical flavor profile and stunning color-changing effect, it seemed like the perfect choice. From the very first time he made the cocktail, Empress 1908 became the foundation of the recipe—and it has remained that way ever since.

Like many home bartenders, Wes didn't stop after making it once. Over the next several years, he continued making the cocktail, making small adjustments to the proportions, refining the presentation, and perfecting the garnish until it became the version we proudly serve today. Looking back at some of the original photos from 2021, it's fun to see how the cocktail has evolved while still staying true to the drink that first inspired it.


One element that has never changed is the signature frothy top.


Traditional gin sours are often finished with an egg white, creating the smooth, velvety foam that makes the cocktail feel light and luxurious. While the egg white doesn't noticeably change the flavor, it softens the citrus, enhances the texture, and gives the drink its elegant finish. It's a technique that has been used by bartenders for generations and remains one of our favorite parts of the cocktail.


When it came time to build the menu at Wandering Whistler Café, Lavender Fields was an easy addition. It had already become one of our favorite cocktails to share with friends and family, and we thought our guests would enjoy it just as much.
